Baby Bok Choy

  1. Sllce the baby bok choy in half lengthwise. Rinse thoroughly (dirt likes to hide in the base).

  2. Heat a splash of olive oil in a skillet over medium-high heat. Place the bok choy cut-side down. Sear for 2–3 minutes without moving them until they are golden brown.

  3. Pour in 2 tablespoons of water (or chicken broth) and immediately cover with a lid. Let it steam for 2 minutes.

  4. Remove the lid, season with a pinch of salt and a squeeze of fresh lemon juice to match the chicken.
