Chicken, Broccoli & Wild Rice Soup Adapted from https://www.sarcasticcooking.com/2012/03/28/broccoli-cheddar-wild-rice-soup/ I made this. Servings: 8 INGREDIENTS 8T Butter 8T Flour 3 cups Whole Milk 3 cups Chicken Broth 2 (15 oz) cans cooked Wild Rice, drained 1 pound Fresh Broccoli 2 (10 oz) cans cooked chicken, drained 2 garlic cloves, grated 1 teaspoon Ground Cumin 1 ½ teaspoon Pepper 1 teaspoon Cajun seasoning 1 teaspoon salt, or to taste Shredded Cheddar Cheese, if desired STEPS 1) Melt the butter in a large stock pot over medium low heat. Whisk in the flour to make a roux. Keep whisking while you add in the whole milk. Increase heat to medium and bring to a simmer. 2) Add the stock and whisk to combine. Simmer for 10 minutes. 3) Add the cooked wild rice and the chopped broccoli. Reduce heat to medium low and simmer more 30 minutes. 4) Stir in the cooked chicken, grated garlic, cumin, pepper, and Cajun seasoning. Reduce heat to low and simmer for another 5-10 minutes. 5) Salt to taste (it may not need any), top with shredded cheese, make sure you have some crusty bread on hand, and enjoy!
