Classic Lasagna

Ingredients
- 1/2 lb mild Italian sausage
- 1/2 lb ground beef (or use all sausage)
- 1 tsp fennel seed
- salt and ground black pepper, to taste
- 1/2 medium yellow onion
- 2 cloves garlic
- 1 jar (24 oz.) pasta sauce (See notes)
- 9 (or 12) pieces Creamette® Lasagna (about 18 in a box)
- 16 oz shredded mozzarella cheese
- 1/2 cup grated Parmesan cheese, plus more to sprinkle
- 16 oz cottage cheese
- 1 egg, beaten
- 1 T dried parsley
- 1/2 tsp red pepper flakes
Steps
Prepare pasta according to package directions; drain and separate.
Preheat oven to 375º F.
Brown sausage with fennel seed, salt, pepper, onion and garlic; drain fat, and stir in pasta sauce.
In a large bowl mix together the beaten egg, cottage, mozzarella and Parmesan cheese, parsley, and red pepper flakes.
Grease a 9 x 13-inch pan, add the tomato sauce as a base, then three noodles as a layer of pasta, then one third of the meat mixture (or one fourth if using 12 noodles) , then a similar fraction of the cheese mixture. Repeat layering.
Cover with aluminum foil and bake 30 minutes.
Remove foil, sprinkle with more Parmesan cheese. and bake for another 15 minutes.
Let stand for 10 minutes before cutting.
Notes
No-boil option is drier, less pleasing.
To make it less dry, consider adding some plain Greek yogurt or even a 2nd jar of pasta sauce as some recipes suggest.
