French Onion Meatloaf

- 1 pound ground beef
- 1/2 pound ground pork
- 1 large onion, thinly sliced
- 2 tablespoons butter
- 1/4 cup all-purpose flour
- 2 cups beef broth
- 1/4 cup Worcestershire sauce
- 1/2 cup grated Gruyère cheese
- 1 large egg
- 1/2 cup breadcrumbs
- 1/4 teaspoon dried thyme
- Salt and pepper to taste
Steps
Caramelize the onions: In a large skillet, melt butter over medium heat. Add the sliced onion and cook, stirring occasionally, until golden brown and caramelized, about 20-25 minutes.
Make the gravy: In the same skillet, add the flour and cook for 1 minute, stirring constantly. Gradually whisk in the beef broth until smooth. Bring to a simmer and cook for 5 minutes, or until thickened. Stir in the Worcestershire sauce and set aside.
Prepare the meatloaf mixture: In a large bowl, combine the ground beef, ground pork, caramelized onions, grated cheese, egg, breadcrumbs, thyme, salt, and pepper. Mix well until combined.
Bake the meatloaf: Transfer the meatloaf mixture to a loaf pan and bake in a preheated oven at 350°F (175°C) for 1 hour, or until a meat thermometer inserted into the center reads 160°F (71°C).
Serve: Remove the meatloaf from the oven and let it rest for 10 minutes before slicing.
Serve with the reserved gravy.
