French Onion Meatloaf

  1. Caramelize the onions: In a large skillet, melt butter over medium heat. Add the sliced onion and cook, stirring occasionally, until golden brown and caramelized, about 20-25 minutes.

  2. Make the gravy: In the same skillet, add the flour and cook for 1 minute, stirring constantly. Gradually whisk in the beef broth until smooth. Bring to a simmer and cook for 5 minutes, or until thickened. Stir in the Worcestershire sauce and set aside.

  3. Prepare the meatloaf mixture: In a large bowl, combine the ground beef, ground pork, caramelized onions, grated cheese, egg, breadcrumbs, thyme, salt, and pepper. Mix well until combined.

  4. Bake the meatloaf: Transfer the meatloaf mixture to a loaf pan and bake in a preheated oven at 350°F (175°C) for 1 hour, or until a meat thermometer inserted into the center reads 160°F (71°C).

  5. Serve: Remove the meatloaf from the oven and let it rest for 10 minutes before slicing.

  6. Serve with the reserved gravy.
