Grandma's Pot Roast Adapted from https://www.tptoriginals.org/relish-grandmas-pot-roast-by-karyn-tomlinson/ Chef Karyn Tomlinson on TPT Relish INGREDIENTS 2 lbs chuck roast 1 medium onion, diced 3 cloves garlic 1 pint mushrooms, chopped 2 sprigs of thyme 4 large carrots, peeled and cut into logs 6 gold potatoes salt and pepper STEPS 1) Season the chuck roast generously with salt and pepper. 2) Sear chuck roast in a dutch oven on medium heat until beautifully browned. 3) Remove the meat and sweat the onions, garlic, mushrooms and thyme on low heat. 4) Once they start to get a little tender, place the meat on top and tuck the carrots and potatoes around it. 5) Cover and cook for 5 to 6 hours at 275 or until an internal temperature of 205°F is reached: This is the ideal temperature for pot roast, as it ensures the collagen breaks down, making the meat incredibly tender and easy to shred.
