Ingredients

• 6 pieces of frozen or fresh cod (about 1.5 pounds)
• 3 tablespoons butter
• 1 lemon, juiced
• 1 onion, sliced
• 1 teaspoon salt
• 1/2 teaspoon black pepper
• 1 teaspoon oregano
• 1- 28 oz. can diced tomatoes

Steps

1. Set the Instant Pot® to saute. Melt the butter. Add remaining ingredients, stirring to combine. Saute for 8-10 minutes.

2. Arrange the fish portions in the sauce, using a spoon to cover each piece with some of the sauce. Lock the lid making sure the valve is in the sealing position. Set the Instant Pot® to manual-high pressure for 5 minutes (3 for fresh fish). When finished, do a quick pressure release by setting the valve to venting. Serve immediately with plenty of sauce.
