Instant Pot Ukrainian Casserole

I made this.

INGREDIENTS

2 T Butter
1 medium Onion, chopped
12 oz V-8 juice
1 lb cabbage, chopped
12-16 oz Kielbasa
16 oz Frozen perogies (cheddar flavor)
½ cup plain Greek yogurt
1 T Flour–to prevent the yogurt from separating
1 t dried dill–or 2 T chopped fresh dill
1 t lemon? pepper

STEPS

1) Measure out yogurt in a bowl and set it on the counter so it can come to room temperature.

2) Sauté onions in butter.

3) Deglaze pot with the V8.

4) Layer in the cabbage, sausage and finally pierogies. Don’t stir.

5) Pressure cook for 1 minute followed by quick release.

6) Temper the yogurt with the flour, and gently stir it in along with the dill and lemon? pepper.

7) Serve!


NOTES

Cut the sausage in half lengthwise and then cut it into quarter inch slices.
