Linguine with scallops Adapted from www.rawseafoods.com to include 1lb each of linguine and scallops I made this. Servings: 5 INGREDIENTS 1 lb frozen scallops 1 lb linguine (or less) 1/4 cup olive oil 4T butter 1T minced garlic Salt and Pepper to taste 1/4 cup toasted plain bread crumbs 1/2 cup minced fresh parsley leaves STEPS 1) Bring large pot of water to boil, cover and reduce heat 2) Melt the butter with the olive oil, add the garlic and cook over medium heat until the garlic turns color 3) Raise the heat to medium-high, add the scallops, salt and pepper and cook just until the surface of the scallops turns opaque, about 2 minutes 4) Stir in the bread crumbs and half the parsley, and turn off the heat 5) Cook the liguine to al dente, and when it is just about done reheat the scallops over medium heat 6) Toss the drained liguine with the sauce (there may be extra linguine according to your taste) 7) Toss in the rest of the parsley and additional olive oil to taste
