Mathew's Sushi Burger Adapted from https://saramoulton.com/2018/10/mathews-sushi-burger/ Servings: 4 INGREDIENTS 2 cups cooked Calrose Rice, medium grain Cooking Spray Assorted sushi toppings: wasabi, nori sliced avocado sliced cucumber sesame seeds STEPS 1) Prepare the rice in a rice cooker. Let cool. Spritz a 1 cup glass measuring up with a little cooking spray. Fill with about ½ a cup of cooked rice. Use a small square of waxed paper to press the rice down firmly. Take a small rubber spatula and gently loosen the edges of the rice. Spray with a little more cooking spray place the rice bun in a non-stick or stick resistent skillet over medium high heat, for about 8 mintues a side, until the rice is slightly browned on both sides. 2) Build your burger. Spread some wasabi on the bottom of the bun. Add some sliced avocado, a square of nori, then the cucumber. Place second rice bun on top and sprinkle with sesame seeds. 3) This would be a great way to repurpose all kinds of leftovers.
