Moroccan cauliflower croquettes ✅

Ingredients
- 1 cauliflower
- 1 Medium onion
- 2 cloves garlic
- 1 Teaspoon Ras El Hanout
- ½ TeaspoonTurmeric (for color)
- ½ Teaspoon Smoked Paprika (for depth)
- Salt and Pepper to taste
- 1 egg
- Flour
- Panko
- Vegetable oil for frying
Steps
• Roast or Steam: Cut one head of cauliflower into florets. Roasting (tossed with a little olive oil) will give a deeper, nuttier flavor, while steaming is faster. Cook until very tender.
• Mash: Mash or rice the cauliflower until it has a potato-like consistency. Let it cool slightly to release steam and excess moisture (this is crucial for croquettes to hold their shape).
• Make the Flavor Base: In a pan, sauté a finely diced small onion and 1-2 cloves of minced garlic in olive oil until soft.
Stir in your chosen Moroccan Spice Blend (see above) and cook for about 30 seconds until fragrant.
• Bind the Mixture: Transfer the cauliflower to a bowl. Add the spiced onion/garlic mixture.
• Binding Agents: Add binder ingredients like grated Parmesan, Gruyère, or Feta cheese (for Mediterranean flavor), breadcrumbs, and 1 egg (to bind).
• Season: Mix well and season generously with salt and pepper.
• Chill: Cover the mixture and refrigerate for at least 2 hours to firm up. This prevents them from falling apart when you shape them.
• Shape: Use floured hands to roll the chilled mixture into small cylinder or ball shapes (croquettes).
• Bread: Set up a standard breading station:
1. Shallow bowl of Flour.
2. Shallow bowl of Beaten Eggs.
3. Shallow bowl of Panko Breadcrumbs (Panko gives the best crunch).
• Coat: Dip each croquette first in flour, then in egg, and finally roll thoroughly in the panko breadcrumbs.
• Deep-Fry: Fry in oil heated to 350F until golden brown and crispy.
• Bake/Air Fry: Bake at 400F or air fry, turning halfway, until golden and hot throughout.
