Mostarda

Ingredients
- 2 Firm Pears or Apples, diced
- ½ cup Dried Apricots, chopped
- ½ cup Sugar
- ¼ cup White Wine Vinegar
- ¼ teaspoon Salt
- 2 tbsp Mustard Powder
- 1 tbsp Yellow Mustard Seeds
Steps
Combine the fruit, sugar, vinegar, and a salt in a saucepan over medium heat.
Let it simmer for about 15–20 minutes until the fruit is tender and the liquid has turned into a thick, glossy syrup.
Remove from heat. In a small bowl, whisk your mustard powder with a teaspoon of water to make a paste, then stir it into the fruit mixture along with the seeds.
Let it cool completely. It actually tastes better the next day once the mustard really permeates the fruit.
Notes
Adding the mustard at the end preserves the heat. If you boil it too long, the "spice" disappears!
