Soy-Dijon Chicken Wings Adapted from https://www.today.com/today/amp/recipes/wbrp9637315 Servings: 3-4 INGREDIENTS 2 pound chicken wings 1 cup soy Dijon marinade 1 cup blue cheese crumbles SOY-DIJON MARINADE: 1 T peppercorns 1 T Kosher salt 1/4 cup red wine 1/4 cup plus 2 T Dijon mustard 2 T soy sauce 2 sprigs thyme 2 T garlic 1/2 cup plus 2T vegetable oil STEPS 1) Fill a large stockpot one-third full with oil and heat over high heat to 375F. 2) Drain and dry the wings well. 3) Working in batches to avoid crowding, if necessary, fry the wings in the oil until brown and crispy, 15 to 20 minutes. 4) Add the cheese to the marinade, add the mixture to the wings and toss well. 5) Serve immediately with chilled celery. SOY-DIJON MARINADE: 1) In a small, dry sauté pan, heat the peppercorns over medium-high heat, stirring, until the peppercorns are fragrant and just begin to smoke, 2-4 minutes. 2) Transfer to a medium non-reactive bowl and add the salt, wine mustard, soy sauce, thyme and garlic. 3) Whisk in the oil gradually to emulsify the mixture. 4) Use or store (lasts 2 weeks, if refrigerated).
